Аннотация:
Kombucha (Medusomyces Gisevii Lindau) is a symbiosis of microorganisms widely applied in various industrial spheres. It is known that symbiosis produce various hydrolytic enzymes (amylases, proteases, lipases). Proteolytic enzymes catalyze reactions of disintegration of peptide bonds in proteins. These enzymes take part in the processes of protein metabolism that play an important role in the vital activity of organisms. The conditions of cultivation Medusomyces Gisevii Lindau for the maximal accumulation of proteases in the native solution are discussed in the article. In doing so, high pigmentation of proteases is shown leading to the necessity of selection of the conditions for the depigmentation. Owing to the fact that proteases in the native solution may disintegrate peptide bonds in other enzymes the enzymatic composition of the native solution was studied with the use of protease inhibitors. © 2018, Folium Ltd.
